Salers is a traditional semi-soft cheese originating from Salers in the Cantal mountains of the Massif Central in Central France. Salers is made only when the cows are out to grass, that is between the 15th of April and 15th of November.
La petite histoire: After maturation, Salers wheels weigh between 30 and 50 kg and about 400 litres of milk is necessary for each one!
Our Salers is awarded AOP ("Appellation d’Origine Protégée", which means Protected Designation of Origin). The AOP mark is the highest distinction awarded by the European Union and confirms the excellence of a product, its artisanship and unimpeachable quality.
