The emergence of winter signifies the arrival of the decadent Mont dβOr, also called Vacherin du Haut-Doubs. Mont DβOr is a wonderfully, soft, resin scented, and seasonal cheese. La petite histoire: In the 12th century, there was a lack of milk production for Gruyère in the stables where the herds passed in winter. This forced producers to design smaller cheeses  to sustain mountain farmers through the winter. In the 18th century, it was served on the table of Louis XV. He appreciated it for the smoothness and creaminess of its paste!
OurΒ Mont d'OrΒ is awarded AOPΒ ("Appellation dβOrigine ProtΓ©gΓ©e",Β which meansΒ Protected Designation of Origin).Β The AOP mark is the highest distinction awarded by the European Union andΒ confirms the excellence of a product, its artisanship and unimpeachable quality.
