Fumaison is a cheese made from sheep's milk, tied up like the famous charcuterie after being smoked. This gives it a unique taste and appearance. Initially, the cheesemaker would hang it from the ceiling like a ham after smoking it with fir wood.

La petite histoire:Β It was created relatively recently (around 1990) by cheesemaker Patrick Beaumont in Auvergne, using raw Lacaune sheep’s milk, combining traditional aging with smoking to create something unique in the region.
