Etivaz AOP is a hard alpine cheese, made from raw milk from May to October, in over a hundred alpine pastures in the Vaud Alps. It has a clean, aromatic, fruity taste, with a slight hazelnut flavour that varies according to the terroir of the different mountain pastures.
La petite histoire: Etivaz is a hard, pressed and cooked alpine cheese, made exclusively in copper cauldrons heated over a wood fire during the summer months (between May 10 and October 10). It is made from raw milk supplied by over 2,800 cows on 130 mountain pastures at altitudes of between 1,000 and 2,000 meters.
Our Etivaz AOP ("Appellation d’Origine Protégée", which means Protected Designation of Origin). The AOP mark is the highest distinction awarded by the European Union and confirms the excellence of a product, its artisanship and unimpeachable quality.
