Chaource is a soft cheese made from cow milk in the village of Chaource, France. It has a soft-ripened, creamy and a little bit crumbly, non-elastic texture. Many people like it young when its rind is hardly formed whereas others prefer it at full maturation.
La petite histoire: The first written traces of Chaource date back to the 14th century. Marguerite of Burgundy appreciated required it at every meal. It was introduced to Charles IV Le Bel during his visit to Chaource.
Our Chaource is awarded AOP ("Appellation d’Origine Protégée", which means Protected Designation of Origin). The AOP mark is the highest distinction awarded by the European Union and confirms the excellence of a product, its artisanship and unimpeachable quality.
