Saint-Marcellin Moulé à la Louche IGP
Originating from the French region of Isère, Saint-Marcellin is a soft cheese made from cow milk. The texture of the young cheese varies from firm to very runny and it has a mild, slightly salty flavour. When ripe, it is irresistible with slightly yeasty taste. It has an intensely rustic, nutty, fruity flavour. Saint-Marcellin is a cousin of the Saint-Félicien in its method of production and maturing, but in a smaller version.
Our Saint-Marcellin is "moulé à la louche", which means that after the milk is curdled, it is manually ladled into small molds called "faisselles".
Our Saint-Marcellin is awarded IGP (“Indication Géographique Controlée”, which means Protected Geographical Indication). This distinction recognises an agricultural product, raw or processed, whose quality, reputation or other characteristics are linked to its geographical origin. Carrying the IGP label protects the name of the product throughout the European Union.
