Feta and Apricot Jam Tart Recipe

It's still summer in the UAE, and it's time for sunny appetizers! Let's stay in theme with this recipe for Sweet and Savory Sun Tart for a touch of originality but with a perfect flavor combination.

Thanks to the shape given to the puff pastry, sun tarts are in line with the trend of "Finger food." You cut and roll "rays" to give it a beautiful sun shape. When baked and lightly golden, this sun tart will be the star of your appetizer!

  • 2 puff pastry sheets 
  • 1 jar of apricot jam
  • Feta cheese
  • Fresh thyme
  • Egg wash: 1 egg yolk, a little water, a pinch of salt



On one puff pastry sheet, spread apricot jam with a spatula. Then crumble the feta cheese and distribute it over the pastry. Sprinkle with thyme at the end.

Place the second puff pastry sheet on top. Press the edges together and brush the pastry with the egg wash. Using a glass placed in the center, cut thin strips in the pastry to create the future rays, starting from the glass and going outward.

Once the strips are cut, twist them several times to create beautiful twists. Be careful not to break the part near the center!

Bake & Serve 

If necessary, brush the rays with more egg wash. Bake in the oven at 180°C (356°F) for about 30 minutes (depending on your oven).


Place it on a beautiful platter for a stunning effect on your appetizer table!
