Baked Vacherin Mont d'Or Recipe

Ingredients (serves 2):
- 1 Mont d'Or cheese
- 1 garlic clove, peeled and thinly sliced and/or rosemary springs
- 1 tablespoon white wine (optional)
- Freshly ground black pepper
- Crusty bread, boiled potatoes and some cold-cuts, to serve
Instructions:
- Preheat the oven to 180°C/350°F.
- Remove the wooden lid and all plastic wrapping from the Mont d’Or cheese, then return it to its wooden box.
- Use a sharp knife to make several small incisions in the top of the cheese. Stud the top of the cheese with sprigs of rosemary, and/or garlic slices into the cuts.
- Drizzle the white wine (if using) over the top of the cheese, then season with black pepper.
- Put the lid back on the box and wrap well in foil.
- Bake for 20-25 minutes. The cheese should be melted throughout and the skin should be darkening. Take off the foil and lid, then break the skin to reveal the warm melted cheese beneath.
- Serve immediately with crusty bread, charcuterie and boiled potatoes.
